Ingredients
- 4 boneless chicken thighs (thawed)
- 200mL apricot nectar
- 1 large onion, cut into wedges
- 1 onion soup sachet
- 4 starchy base serves (rice or potato)
Note: Cook the dish in a foil BBQ tray to save on cleanup afterwards!
Directions
- Pour ¾ of the onion soup sachet into a deep 20cm baking dish.
- Add chicken thighs and wedged onion into the dish, rolling the thighs in the soup mix to coat.
- Pour the apricot nectar over the chicken thighs and onion.
- Sprinkle the remaining onion soup mix over the entire dish.
- Cover the dish with foil and put it in the oven, set to 180ºC for 80 minutes.
- Serve over instant rice, boiled baby potatoes, or mash—whichever is easiest!
