Spicy Chorizo Rice

Packed with smoky chorizo, hearty green lentils and tender rice, this one-pot recipe is big on flavour and perfect for an easy camp meal. Everything comes together in the pressure cooker with tomatoes, garlic and onion for a rich, comforting dish that requires minimal prep and even less washing up. Finish with fresh chives and a sprinkle of chilli flakes for an extra kick.

Ingredients

  • 2 chorizo sausages, diced
  • 1 x 410g can diced (or crushed) tomatoes
  • 1½ cups white rice
  • 1 cup green lentils, rinsed
  • 3 cloves garlic, finely chopped
  • 1 brown onion, finely chopped
  • 500ml water, split into 300ml + 200ml
  • Salt and pepper, to taste

Optional: Chives make a nice flavourful garnish, and some chilli flakes give it an extra kick!

Directions

  1. Set the pressure cooker to the rice mode and cook the diced chorizo, onion and garlic with the lid off until the onion is translucent and fragrant. Don’t be alarmed if this takes a while. Season with pepper.
  2. Add the lentils, tomato and 300ml water. Stir well to combine. Close the lid and restart the rice mode. Let the contents cook for 10 minutes, and then press the Keep Warm button.
  3. Carefully release the pressure and open the lid. Add the rice and remaining 200ml water. Stir gently to combine.
  4. Close the lid again and press the rice button. Bring the timer down to 10 minutes. You may need to check on the rice depending on how much heat has been retained or lost in the earlier steps.
  5. Release the pressure, fluff the rice gently, season to taste and serve.
